
This quick,easy snack is a Christmas tradition around our house.
12 or 16 oz. box of oyster cracker
1 package Hidden Valley Ranch powder
¼ tsp lemon pepper
1 tsp dill weed
¼ tsp garlic powder
¾ cup oil or melted butter

Combine ranch mix and oil (or butter). Add dill weed, garlic powder, and
lemon pepper.
Pour over crackers and stir to coat. Place in warm oven for 15-20 minutes.
These take a bit of work to get right but they are great when you get them right!
1 cup grated cheese (cheddar or colby seems to work the best)
2 tsp flour
¼ tsp salt
2 egg whites; stiffly beaten
¾ cup fine cracker crumbs
½ cup vegetable oil

Combine cheese, flour, and salt. Gently stir in egg whites using your
hands. Pat mixture
into small balls and roll in cracker crumbs. Heat oil in skillet. When hot, put balls in
pan
without crowding them together. Cook over medium heat turning so all sides brown. Drain.
This is one of the best casserole I've had and it is really easy to throw together.
1 pound ground beef browned with a chopped onion
1 can beef noodle soup
1 can cream of mushroom soup
1 cup cooked instant rice
1 can evaporated milk
½ cup cheddar cheese; grated

Combine all ingredients and bake at 350° for 1½ hours or until browned
on top.
Sprinkle with cheese and broil til melted.
A little bit more work but worth it occasionally.
1 9-inch unbaked pastry shell (pricked)
8 cheese slices
1 pound ground beef
½ cup tomato sauce
¼ cup chopped onion
1 beef flavor bouillon cube
3 eggs beaten well
2 tbsp flour
chopped tomato and shredded lettuce

Preheat oven to 425°. Bake pie shell 8 min and remove from oven. Reduce
temperature to 350°. Cut six slices of cheese into pieces; set aside. Brown meat;
drain excess fat. Add tomato sauce, onion, and bouillon cube. Cook and stir over low
heat until bouillon cube dissolves. Remove from heat and stir in eggs, flour and
cheese pieces. Put in prepared shell. Bake 20-25 minutes or until hot. Arrange
remaining cheese on top. Return to oven for 3-5 minutes or until cheese melts. Garnish
with tomato and lettuce.
The best way to describe this one is simple!
½ pound stir-fry beef; sliced thin
1 can mushrooms; chopped
½ cup onion; chopped
1 can cream of mushroom soup
½ cup sour cream
½ tsp paprika

Brown beef, mushrooms, and onion. Combine soup, sour cream, and paprika
until smooth. Add to beef. Stir well. Cover and simmer til warm. Great served
over noodles or toasted dinner rolls.

1 4 oz can crescent rolls
½ pound ground beef
½ package dry taco seasoning mix
½ cup sour cream
1 cup shredded cheddar cheese
1 cup lettuce; chopped
1 large tomato; chopped

FOR CRUST:
Preheat oven to 375°. Grease 9-inch square pan. Unroll crescent roll
dough carefully
(DO NOT SEPARATE INTO TRIANGLES!). Press seams together so dough is in
one piece. Place dough in pan. Bake about five minutes. Remove from oven.
FOR FILLING:
Brown ground beef and drain fat. Add taco seasoning and stir well. Cook
for five minutes
over low heat. Spread evenly over baked crust. Spread sour cream over meat. Sprinkle
with shredded cheese. Bake 15-20 minutes or until crust is browned and cheese is melted.
Top with lettuce and tomato.
This is probably one of my family's favorites. It's a great way to use up left over roast beef.
3 cups cooked roast beef; shredded or torn
½ cup chopped mushrooms
1 can cream of mushroom soup
¼ cup onion; chopped very fine
Hamburger buns or rolls

Mix all ingredients (minus rolls!) together in saucepan. Simmer covered
over low heat for at least an
hour (actually several hours in the crock pot is best). STIR OFTEN! Serve on hamburger
buns or rolls.
This is an easy alternative to meatball with a very similar taste.
1 pound ground beef
1 small onion; chopped
2 tbsp grated parmesan cheese
½ tsp garlic salt
one small jar chunky-style spaghetti sauce
½ cup shredded mozarella
2 hamburger buns; toasted

Mix beef, onion, parmesan cheese, and garlic salt well. Shape into
patties. Cook over medium heat;
turning frequently until done. Pour spaghetti sauce over patties. Heat until bubbling. Top
each patty with
mozarella cheese and let stand till melted. Serve on toasted bun half.
These meatballs are a meal by themselves!
1 can tomato soup
1 small onion; minced
1 garlic clove; minced
¼ cup seasoned bread crumbs
1 egg
¼ tsp (each) salt and pepper
1 pound ground beef
1 tbsp vegetable oil
¾ cup milk

Combine onion, garlic, bread crumbs, eggs, salt and pepper, and ¼ of
tomato soup. Add
ground beef and mix well. Form into meatballs. Heat oil in pan. Add meatballs and cook
over
medium-high heat turning often until browned (about eight minutes) Stir in remaining soup
and
milk. Bring to a boil. Reduce heat to low; cover and simmer for about 15 minutes. Serve
over
pasta or rice.
These are popular with my kids. Just remember they will be extremely hot inside for quite awhile!
1 pound ground beef
¼ cup onion; minced
¼ tsp (each) salt and pepper
½ tsp garlic salt
1 package lumpia (egg roll) wrappers
½ cup cooking oil

Brown meat and onion; drain off fat. Add salt, pepper, and garlic salt.
Simmer covered over
low heat. Place tablespoon of mixture in the center of lumpia wrapper and follow back of
package for directions on rolling. Cook in preheated oil; turning frequently til browned.
Make sure to serve this one warm!
FOR CAKE:
1 cup flour
½ cup milk
¾ cup sugar
1 tsp vanilla
½ tsp salt
2 tsp baking powder

FOR TOPPING:
3 tbsp cocoa
½ cup brown sugar
½ cup white sugar

Combine all of cake ingredients and mix well. Put in 9x9x2 pan. In bowl
combine topping
ingredients. Sprinkle over batter. Pour 1 cup cold water over all and bake at 375° for
30 minutes. Let cool slightly before serving.
Very sweet; definitely not for dieters!
½ cup butter
1½ cups graham cracker crumbs
1 14-ounce can sweetened condensed milk
1 cup semi-sweet chocolate chips
1 cup chopped nuts (optional)

Preheat oven to 325°. PLace butter in baking pan in oven til melted.
Sprinkle crumbs over butter.
Pour condensed milk over crumbs. Sprinkle chocolate chips and nuts on top. Press down
firmly.
Bake 25-30 minutes or until lightly browned. Cool. Store at room temperature.
Simple little desserts!
½ cup graham cracker crumbs
1 tbsp sugar
1 tbsp margarine; melted
1 eight ounce package cream cheese; softened
¼ cup sugar
1½ tsp lemon juice
¼ tsp vanilla
1 egg

Combine crumbs, sugar, and margarine. Press rounded measuring spoon
fulls of crumbs
into bottoms of six paper-lined muffin cups. Bake for five minutes at 325°. Combine cream
cheese, sugar, juice, and vanilla until well blended. Blend in egg, Pour over each crust
til about
¾ full. Bake 25 minutes at 325°. Cool before removing from pan. Chill.
Extremely rich!
FOR CRUST:
2 cups Oreo crumbs (about 24-30 whole cookies crushed)
6 tbsp margarine; softened
FOR FILLING:
1 envelope unflavored gelatin
¼ cup cold water
1 8 ounce package cream cheese
½ cup sugar
¾ cup milk
1 cup heavy cream; whipped
1¼ cup chopped Oreos

FOR CRUST:
Combine crumbs and margarine. Press into bottom and 1½ inches up the
sides of 9-inch
springform pan.
FOR FILLING:
Soften gelatin in water. Stir over low heat until dissolved. Combine
cream cheese and sugar
mixing at medium sped until well blended. Chill until mixture is thickened but not set.
Fold in
whipped cream. Reserve 1½ cups cream cheese mixture. Pour remaining mixture over crust.
Top with chopped Oreos and reserved cream cheese mixture. Chill until firm.
Delicious!
2 envelopes Knox unflavored gelatin
½ cup cold water
1 can crushed pineapple with juice
½ cup sugar
2 eight oz. packages cream cheese
1 7 oz. jar marshmallow cream
2 cups Cool Whip

Mix gelatin with water and let stand. Boil pineapple with juice and
sugar till at a full
boil (WATCH CAREFULLY OR IT WILL BURN!). Remove from heat. Stir in gelatin
and store in refrigerator until cooled. Mix cream cheese and mallow cream. Add pineapple
mixture and refrigerate for ½ hour. Fold Cool Whip into pineapple mixture. Place into
9x12"
dish and refrigerate.
Very easy to make.
1 cup butter; softened
1 tsp vanilla
2/3 cup sugar
2 eggs
1½ cups flour
½ tsp salt

Preheat oven to 375°. Cream butter and vanilla. Gradually add sugar and
eggs; beat well.
Mix flour and salt together. Add to butter mixture and blend thoroughly. Arrange by ½ tsp
fulls
on cookie sheet; leaving at least 2" between. Flatten with knife dipped in cold
water. Bake eight
minutes or til lightly browned.
This is a wonderful pound cake with or without the lemon!
1½ cups flour
1½ tsp baking powder
¼ tsp salt
½ cup butter or margarine; softened
1 cup sugar
2 large eggs
½ cup milk
finely grated peel and juice of one lemon

Preheat oven to 350°. Grease and flour a 9x5 loaf pan. Combine flour,
baking powder, and
salt in a bowl; set aside. In a large bowl, beat butter until light. Add sugar and beat
until fluffy. Add
eggs one at a time. Beat well after each. Add dry ingredients alternatly with milk. Add
lemon peel
and juice. Beat until smooth. Spoon batter into prepared pan. Smooth top with spatula.
Bake 1 hour
. Cool 15 minutes in pan.
LEMON GLAZE (optional):
juice of one lemon
¼ cup sugar

Combine in a saucepan over low heat until sugar dissolves. Pour glaze
evenly over cake. Let cool
thoroughly in pan.

4 cups Bisquick
5 tbsp sugar
1 cold beer

Mix all ingredients until blended well. Pour into muffin pans and
bake in pre-heated oven at 350° for 35
to 45 minutes.
These are very cake-like and are great for kids!
3 ¼ cups flour
3 eggs
1 ½ cups sugar
1 cup butter or margarine
1 cup milk
2 tsp grated lemon
1 tbsp baking soda
1 tsp vanilla
½ tsp salt
12 oz. bag of Chocolate Chips

Mix ingredients in large bowl and blend at medium speed until fully blended; scraping sides occasionally. When blended stir in chocolate chips. Pre-heat oven to 325°. Drop batter by rounded teaspoonfulls onto greased cookie sheet. Bake for 12 - 15 minutes, until lightly browned around the edges. Makes about 2½ dozen cookies.
2½ cups flour
1 tsp baking soda
¾ cup white sugar
¾ cup brown sugar
1 cup butter or shortening
2 eggs
2 tbsp hot water
2 tbsp salt
2 tbsp vanilla
Half of bag of chocolate chips

Mix all ingredients together. Bake in preheated 350° oven for approximately 12 minutes or golden brown.
3 cups white sugar
1 cup shortening (or ½ cup shortening and ½ cup butter)
1 cup sour cream
1 cup buttermilk
3 eggs
2 tsp baking soda
3 tsp baking powder
5½ cups flour
1 tbsp lemon juice or vanilla

These work best if you mix them the day before and let them refrigerate overnight. Mix all ingredients together and after chilling roll and cut into shapes. Bake in preheated 350° oven for 10 - 15 minutes. Cookies will be very puffy and light golden in color.
1 cup oleo
3 cups crunchy peanut butter
2 cups brown sugar
2 cups white sugar
2 tbsp white corn syrup
4tsp baking soda
½ pound M&M chocolate candies
½ pound chocolate chips
9 cups oatmeal

Bake in preheated 350° oven for 12- 15 minutes. This makes a huge batch!! They do freeze well.
